Its made entirely with Pedro Ximnez sourced from 20 30 year old vines grown in albariza soils. It achieves its 15% alcohol content through natural ripeness, not fortification, and spends at least five years under flor to develop a wonderfully incisive complexity. This wine is excellent as a chilled apritif.
